Sweet salad with plums and beets

For example, like our today's beetroot salad with plums, which looks more like a dessert than a salad. Bright, sweet - even capricious kids will like it, and you can feed them vitamin boiled beets!
Plums and beets - an original combination, isn't it? But, if you look closely and try ... The purple “Hungarian” is in perfect harmony with the ruby beets, and the yellow centers of the plums create a beautiful contrast. And the company is suitable for taste - remember the recipe for Bordeaux salad with prunes? So, this recipe is a summer, dessert version of the spicy Bordeaux. Instead of prunes we take fresh, ripe plums; replace mayonnaise with sour cream or natural yogurt; pickles - with lemon juice, a clove of garlic - with cranberries or raspberries, and you get a dessert salad!

- 1-2 beets;
- 3-5 drain;
- 1-2 tbsp. l lemon juice;
- 1 tsp sugar;
- a pinch of salt;
- 1-2 tbsp sour cream;

A method of preparing a sweet salad with plums and beets
Wash vegetables and fruits.
Boil beets in their skins or bake in foil until soft. Boiling, as well as baking, will take about 40 minutes. Once cooked, the boiled beets should be poured with cold water for 5-7 minutes - this will make it easier to peel. And baked and so easily cleaned. Then grate beets on a coarse grater.
Plums are better to choose those in which the seeds are easily separated - for example, varieties "Vengerka". Then you can carefully divide them into halves and cut into even slices.
We mix the slices of plums with grated beets, sprinkle with lemon juice, sugar and salt, mix, taste and adjust the acid and sweetness, adding the necessary ingredients. Instead of lemon juice, you can use cranberry juice.
Season the salad with sour cream or yogurt without additives and mix.
We spread the salad with beets and plums on a plate, decorate with a leaf of fresh mint - a bright green color looks very elegant on the cherry velvet of a dessert salad. And for even more attractive dishes, you can decorate it with several berries of raspberries, blackberries, sprinkle with chopped walnuts, and serve with plum slices.
